DENISON, TEXAS – Heritage Butchery & Barbecue will open in spring of 2022 bringing a unique market and dining experience to the region.

Heritage Butchery & Barbecue is creating an artisan butcher concept to bring traditional, custom-butchered, locally sourced meats and locally sourced market items to the Texoma trade area. The 3,500± square foot restaurant with drive-thru will be a traditional butcher shop supplying customers with quality, locally sourced, custom-cut beef, lamb, pork, and poultry as well as a variety of custom sausages and cured meats. The market will have Texoma sourced eggs, cheese, seasonal produce and honey, as well as a variety of handcrafted items. On the restaurant side, Heritage will offer slow-smoked Texas barbecue, sausage, and cooked-to-order hamburgers made with ground beef directly from the butcher shop.  Seasonal, house-made sides will be prepared with the same local ingredients sold in the market.  Even the real sugar sodas are sourced from a small, north Texas producer.

The Denison location at 211 N Hwy 75 was selected by owners Brad and Stephanie Hammett and General Manager Pete Gonzales. Stephanie Hammett said, “The concept for our shop began materializing in a quiet corner of a church lobby.  Introduced by a mutual friend and local rancher, an experienced butcher with a heritage in the food industry and a physician with a particular fondness for butcher shops began dreaming about what they could build together for the Texoma community.” 

Artisan butcher Pete Gonzales, who will serve as the General Manager, began searching for the ideal facility and location to serve future Texoma customers. In early 2021, Gonzales reached out to Denison Development Alliance (DDA) to discuss the Micro-Manufacturing Incentive which will reimburse up to 15% of the production facility investment in equipment. With this assistance, the facility will be retrofitted and equipped for traditional processing which will make locally sourced meats readily available for local consumers. 

DDA Chairman Brett Evans said, “From the beginning, we knew the Heritage concept was a great fit for the Micro-Manufacturing Incentive. This production facility and retail market will support local farmers and ranchers while also providing high quality farm-to-table choices for consumers in Grayson County and beyond. We are pleased they chose to invest in Denison.”

After months of site searches this location on Hwy 75 was purchased and the transition from dream to reality began. The team anticipates opening in April.
